Camping Chicken Tortellini Soup

Ingredients
- 2 tbl olive oil
- 1 chopped onion
- 3 sliced carrots
- 3 sliced celery hearts
- 3 minced garlic cloves
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp italian seasoning
- 1/4 tsp red pepper flakes
- 12 cups bone broth or chicken broth
- 2 cans chicken drained
- 1 package refrigerated cheese tortellini
- 1/4 cup parsley in the container
- Splash of lemon juice
- Grated parmesan
Directions
- Heat the olive oil in a large pot over MEDIUM heat. Add the vegetables and cook until softened (5-7 minutes). Add the garlic, seasonings and cook until fragrant (1 minute).
- Stir in the bone broth, add lid, and bring to a boil. Add the chicken and tortellini and cook 3-5 minutes until tortellini is tender. Add splash of lemon juice and parsley.
- Serve with grated parmesan and splash of hot sauce for zing.
