As the weather starts to get cooler at night it is the perfect time to break out the soup recipes.  This one is a light version of chicken soup and perfect for those in between months.  We made this while camping at Powathan State Park. #chicken #soup #tortellini

 

Camping Chicken Tortellini Soup

Ingredients

  • 2 tbl olive oil
  • 1 chopped onion
  • 3 sliced carrots
  • 3 sliced celery hearts
  • 3 minced garlic cloves
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp italian seasoning
  • 1/4 tsp red pepper flakes
  • 12 cups bone broth or chicken broth
  • 2 cans chicken drained
  • 1 package refrigerated cheese tortellini
  • 1/4 cup parsley in the container
  • Splash of lemon juice
  • Grated parmesan

Directions

  1. Heat the olive oil in a large pot over MEDIUM heat. Add the vegetables and cook until softened (5-7 minutes). Add the garlic, seasonings and cook until fragrant (1 minute).
  2. Stir in the bone broth, add lid, and bring to a boil. Add the chicken and tortellini and cook 3-5 minutes until tortellini is tender. Add splash of lemon juice and parsley.
  3. Serve with grated parmesan and splash of hot sauce for zing.
